I (Brookie) read a lot about Guam on the internet, because I'm too shy to go out and talk to people, haha, and one thing I read in a few places is that Shirley's Spam-Fried Rice is THE flavor of Guam.
One of Nick's coworkers told us that Guam and Hawaii have a rivalry over Spam - even though Hawaii actually consumes more Spam, Guam consumes the most per capita, so the glory... er, Spam glory, should go to Guam.
Anyways. Shirley's:

Well, it was tasty! What can I say? It tastes how it looks. Spam has an elusive, rich, almost melty yumminess that isn't like ham - it just tastes really good in things. I remember this from the spam-and-fried egg sandwiches my great grandma used to make - they were incredibly, memorably delicious, and I used to think it was because they were covered in cheese and salad dressing. Now I suspect it was the Spam that made them so good. Here, the Spam is mixed with rice and carrots and eggs and fresh green onions and it's just good old-fashioned comfort food. It makes me think that we could try making Spam Jambalaya ... if only we could find some andouille!
Sometimes processed meat just doesn't get the credit that it should. I am obligated to plug Treat here, as a less greasy alternative to SPAM.
